The other snow day activity we did was something I first saw on Teach Preschool (I have seen the general idea replicated all over now). Basically you take contact paper, put the sticky side up and then let your child create and explore.
I decided to tape the contact paper on our sliding glass door so the girls could look outside at the falling snow. I gave them snowflakes, styrofoam pieces, ribbons, pom poms, crepe paper, cotton balls and paper circles to decorate with. They really enjoyed it.
As soon as Davey finished putting up all of her materials, she started taking it down. It took everything in me to not stop her but I decided it was better to just let her explore.
